does logger command work in the sparse zone?

can you run syslog-ng in debug mode to see if it actually receives anything?

also, can you confirm that the door file is not shared between the zones?

unning syslog-ng in debug mode:

# syslog-ng -Fedv

it'll stay in the foreground, and write all internal and debug messages to the console.
